Uruguayan Lamb Shoulder — Specifications
The lamb shoulder is one of the most versatile and flavourful lamb cuts for export — a well-worked muscle with good intramuscular fat that yields exceptional results when slow-roasted, braised or cooked as kebab. Frigorífico Pando's Uruguayan lamb shoulder comes from Corriedale and Merino crossbred sheep raised on natural pampas pastures.
Available bone-in (whole shoulder or half-shoulder), boneless rolled, or diced/manufactured. Bone-in shoulders are preferred in Middle Eastern and North African markets for traditional slow-roast preparations; boneless rolled is popular in European retail for oven-ready convenience.
Halal-certified lamb shoulder — the single most important certification for our core lamb export markets in Saudi Arabia, UAE, and Malaysia. Full Halal documentation including slaughter supervision report and traceability certificates provided per container. Also exported to EU markets under Uruguay's EU-approved status.
